Default Help with ISM lesson

Hi,
I am in the middle of doing a 3 week TEFL course, I was shown a video demonstration of somebody giving a ISM lesson. First time this has been shown and now I have to make a lesson plan for adults and do the class next Monday.
I get the basics, I have audio conversation with a waitress taking a food order and the guy ordering, I also have the list of key words and some questions. My problem is, how do I actually put things in order when doing the lesson? This is what I have gathered so far.
Warmer
Set the scene, I have a flash card with waitress taking a food order.
Play the dialog
Give students a script, pair them up so they can practice
This is where I now get confused, PP....not sure what to do as I have only learnt PPP and taken a class using that method. I am sure eliciting and concept check are in the PP but do not know how to go about it.
