Do you only stick to the text book or do you have some additional activities? If they only follow the textbook it can really be boring.
Also, if you think they want more theory, why don't you add more of it? if that makes them happy.  I think you need not worry about not speaking French, if they feel that they profit from your lessons they will forget about that fact.
